Assignment brief:

  1. Identify and recruit a subject from a specific lifecycle phase (e.g. athlete, pregnant, elderly, adolescent female) or disease state (e.g. high cholesterol/coeliac/hypertension).
  2. Your subject’s food and beverage intake must be recorded over seven consecutive days.
  3. You will analyze the subject’s food and fluid intake data and critically evaluate your subject’s nutrient intake and anthropometric data, highlighting any issues
  4. Nutrients that should be assessed include Macronutrients (Carbohydrates, Lipids, and Protein), Sugars, Saturated Fatty acids and Cholesterol, Monounsaturated Fatty acids, Polyunsaturated Fatty Acids, Fibre, Vitamins: A, D, C, Folate, B12, Minerals: Iron, Calcium, Sodium (converted to salt), Potassium and Zinc – if another nutrient (not listed above) appears to be outside the recommended intakes, you can discuss this also.
  5. You will communicate your findings by means of a research project (80%) and present a short summary of your study to the class (20%) (date to be decided)
